Gluten Free Recipes
I have been writing a "Column of the Month" on a subject of particular interest to my readers each year since 1990. These subjects have included potatoes, rice, pasta, legumes, vegetables, fruit, grains, vegetarian entrees, fish, desserts, cheeses, high calcium recipes, spices and herbs. For 2004, I have chosen to devote my "Column of the Month" to gluten free recipes.
Gluten sensitivity is one of the fastest growing dietary concerns in this country today. My choice was originally based on the fact that I have been receiving so many letters from readers asking for gluten free recipes. However, when I started doing reseach on the subject, I found that many of the symtoms described due to gluten consumption, such as severe abdominal pain and bloating were problems I frequently experienced myself.
After just one month of a totally gluten free diet, I stopped having stomach aches and after two months I had lost two inches around my waist without any weight loss. I was truly amazed because I routinely eat a well balanced, low fat diet and get an enormous amount of exercise. Because I now feel better than I have in years, I want to share this cutting edge information with my readers. Gluten free products used to be considered just for people with Celiac disease, a serious autoimmune disease which affects about one per cent of the population and frequently goes undiagnosed for years. However, current research indicates that as much as fifty per cent of the population may suffer from gluten sensitivity or intolerance and this condition is frequently mis-diagnosed as another problem.
Gluten is found in wheat, barley and rye and most gluten free products are labeled "gluten free". Because of increased customer demand there are more and more gluten free products available, such as bread, crackers, pasta, flours, baking mixes, English muffins, hamburger buns, bagels, pizza crusts, cinnamon rolls and even doughnuts.
