Here is a 'meal in minutes' that is inexpensive, easy to make, and will appeal to everyone in the family.

Preparation:
  1. Cook the beef and bacon, stirring, until the beef is crumbly. Add the onion, celery, and garlic and cook 5 minutes. Stir in the remaining ingredients, except he cabbage, and bring to a simmer.
  2. Add the cabbage and cook, covered, until the cabbage is tender, about 3 minutes.

Makes 10 cups; eight 1 -cup servings

Ingredients:

  • 1 pound very lean ground sirloin
  • 4 ounces Canadian bacon, matchstick cut
  • 1 medium onion, thinly sliced (2 cups)
  • 1/2 cup thinly sliced celery
  • 3 garlic cloves, minced or pressed
  • 1 16-ounce can ready-cut tomatoes, undrained
  • 1 8-ounce can tomato sauce (1 cup)
  • 2 cups water
  • 1 16-ounce can red kidney beans, undrained
  • 3/4 teaspoon salt
  • 1 teaspoon chili powder
  • 1/8 teaspoon freshly ground black pepper
  • 3 cups thinly shredded cabbage
